UK "artisan baker and cook" Julia Georgallis has just released her cookbook "How To Eat Your Christmas Tree."
While there are some interesting recipes in the book, the real goal is to get people to think about sustainability and consider the environmental impact of chopping down millions of trees every year. Georgallis notes in an interview with Smithsonian those same trees "could absorb 880 million tonnes of carbon, which is the equivalent to global air traffic in one year" if they were allowed to grow.
Some of the recipes in the cookbook include:
Christmas-Cured Fish which uses tree needles for both decoration and seasoning
Christmas Tree Pickles that adds needles to a jar of pickles for a month
Christmas Tree Ice Cream is flavored with ginger and blue spruce needles
"How To Eat Your Christmas Tree" is available on Amazon for $14.99 in hardcover format or $6.99 for the Kindle format.
